Julian Strowasser has been head chef at Lakeside sinc March 2020. Born in Freising, Germany. Stowasser has worked at numerous exciting places, including Restaurant Baiersbronn and at the Tetsuya's restaurant in Sydney. From 2012 to 2014, Stowasser worked as Chef de Partie at the Aqua restaurant at The Ritz Carlton Hotel in Wolfsburg. As sous chef, he was at the Atelier restaurant at the Bayerischer Hof Hotel in Munich from 2014 to 2018, where three stars were earned under chef Jan Hartwig. Together with his team, Julian Stowasser was awarded one star in the Guide Michelin in spring 2021. This was followed by the award of two stars in thr Guide Michelin at the beginning of April 2023.
For host Michel Buder and his team, genuine hospitality with natural cordiality is one of the most important components during a successful restaurant visit. For him, this includes "an unobtrusive demeanor, expert service and a steady presence without being obtrusive". After his training in the Harz Mountains, the 34-year-old worked in the Haerlin gourmet restaurant at the Hotel Vier Jahreszeiten in Hamburg. Michel Buder then moved to the Résidence restaurant in Essen. He gained further experience at Gusthof Stolpe in Stolpe as a sommelier and at Strandhotel Dünenmeer on the Darß as a sommelier and restaurant manager. Since the opening of The Fontenay, the native of Lusatia has ensured that guests at the Lakeside feel completely at home. In 2020 the Great Restaurant & Hotel Guide honored his team and him as "Service of the Year".
For Stefanie Hehn, head sommelier and award-winnig master sommelier, the most important thing is that people enjoy drinking wine - she wants to inspire people with her heart's desire and show them new worlds. The 36-year-old is responsible for the wine concept throughout the hotel. Stefanie Hehn began her career 2005 with an apprenticeship as a hotel manageress at the Romantikhotel Laudensacks Parkhotel in Bad Kissingen. After further restaurant stations in the Speisemeisterei in Stuttgart and in the restaurant Chez Ann in Warnemünde, she was able to expand her sommelier experience in the Villa Rothschild in Königstein. In 2009 she successfully passed the examination as a certified sommelier at the IHK (Chamber of Industry and Commerce). In 2010 the Bavarian-born sommelier moved to Hamburg, which was "love at first sight" for her. She worked in Jacob's restaurant at the Hotel Louis C. Jacob as a sommelier before moving to Tegernsee in 2012, to the Überfahrt restaurant, and from there returning to The Fontenay in Hamburg.
Even at an early age, the half-Italian and current head pastry chef Marco D'Andrea knew that his heart beats for weet things. Today, he and his team implement creative patisserie concepts throughout The Fontenay: from exciting dessert creations to a newly interpreted Afternoon Tea in the Atrium Lounge. Several times Marco D'Andrea has been awarded as patissier of the year.
